    Validation of biomarkers of infant and toddler carotenoid intake
    Role Description: PROJECT NARRATIVE Rapid, easy, and valid biomarkers of carotenoid, fruit, and vegetable intake are needed to monitor the association between infants and toddlers’ dietary intakes and health outcomes. The purpose of this project is to determine if a rapid, non-invasive measure of skin carotenoids can provide a valid estimate of carotenoid and fruit and vegetable intake in diverse American infants and toddlers, and if children’s carotenoid intake is associated with their visual function. Simple and valid measures to estimate infant and toddler fruit, vegetable and carotenoid intake will promote our understanding of children’s nutrition and health, and will help organizations to monitor children’s dietary intakes as needed to promote healthier dietary patterns.
